
Our 2009 Holiday Recipe Contest Winner!
This delicious appetizer is perfect for any celebration.
It takes 40 minutes to make.
Ingredients:
- 2 pounds raw bay scallops
- 2 1/2 cups Honey Bunches of Oats Honey Roasted
- 2 whole lemons
- Prepared pie dough for one 9-inch pie (top and bottom)
- 2 cups margarine or butter
- 1 tablespoon dry mustard
Directions
- Preheat oven to 325 degrees
- Line 48-72 nonstick mini-muffin tins with pastry, baking spray optional to prevent sticking
- Pre-cook pastry for 15 minutes and set aside
- Pulse Honey Bunches of Oats in food processor until finely ground (about 4-5 minutes)
- Add dry mustard to ground cereal mixture
- Grate the zest off both lemons, add to cereal mixture
- Coat scallops with mixture and distribute evenly in pastry tins
- Top each tartlet with ½ teaspoon butter
- Bake 15-20 minutes or until pastry is done
- Squirt each pastry with a drop of lemon juice to taste
Optional Extra Touches:
Slice lemons and place a sliver on top of each tartlet for garnish
Sprinkle a pinch of cayenne pepper for a kick, or use paprika for a milder finish
Serve hot. Make plenty, there won't be leftovers!
