2 eggs 2 lb. boneless skinless chicken breasts, cut into 1-inch wide strips 4-1/2 cups Honey Bunches of Oats Cereal, finely crushed 1 cup barbecue sauce

Directions

PREHEAT oven to 375°F. Beat eggs lightly in shallow dish or pie plate. Dip chicken in eggs, turning over to evenly coat both sides of each strip. Coat chicken evenly with cereal. Tips & Suggestions

Serving Suggestion: Serve with steamed fresh vegetables and roasted potatoes. Fun Idea: For a party appetizer tray, serve on a large platter along with cut-up fresh vegetables, such as carrots, celery and peppers. Don't forget the sauce for dipping! Substitute: Substitute ranch dressing for the barbecue sauce. Nutrition Bonus: For a simple dish made with lean meat that can help your family eat right, try these crunchy, baked chicken strips. They're also rich in iron, thanks to the fortified cereal.
